Tom Allen has left his position as chef de cuisine at Dinner By Heston Blumenthal in Dubai and will take up a new position as Culinary Director at JW Marriott Marquis in March.
Allen has been working with Blumenthal for 20 years, joining his team in 2005 as chef de partie before moving up to group head chef for Dinner by Heston Blumenthal in 2009.
He then worked at the original London branch of the restaurant until moving to Atlantis The Royal in August 2021 to prepare for the opening of the Dubai outpost.
Currently holding three toques from Gault&Millau, with a score of 15.5/20, Allen has bee shortlisted in the fine dining guide's Chef of the Year category each year since opening in 2023.
Allen's remit will include in-room dining and the banquet function, Prime68, Rang Mahal, Tong Thai and Bridgewater Tavern, as well as Lush Burger, the newly opened Nomadia Lounge and more.
