Le Royal Méridien Beach Resort & Spa has announced the appointment of Vitaly Medvedev as its new executive chef. Bringing over 15 years of experience in luxury hospitality, Medvedev will oversee the resort's diverse culinary operations, further enhancing its reputation for world-class dining experiences.
Prior to joining Le Royal Méridien, Medvedev served as executive chef at The Ritz-Carlton Abu Dhabi, Grand Canal, where he managed eight dining outlets, a 3,000-person banquet space, and a team of 140 chefs and stewards. Under his leadership, two restaurants were Michelin Selected for three consecutive years (2023-2025), and the hotel received multiple accolades, including Best Brunch and Best Restaurant awards. He also played a pivotal role in the Dubai Expo 2020, successfully leading the USA Pavilion's restaurant and banquet operations, generating over US$1.5 million in revenue.
Now, at Le Royal Méridien Beach Resort & Spa, Medvedev oversees 150 talented and diverse chefs, and serves around 3,000 guests per day, spanning from breakfast, lunch, dinner and in-room dining services.
A seasoned culinary leader, Medvedev has worked in prestigious properties across The Ritz-Carlton, St. Regis, and Widder Hotel Zurich, leading pre-opening teams at The Ritz-Carlton Amman, St. Regis Doha, and St. Regis Riyadh. His commitment to sustainability has been reflected in pioneering projects, including the establishment of a Vertical Farm at The Ritz-Carlton Abu Dhabi, producing 10 kg of fresh greens daily, and the implementation of a "No More Plastic Bottles" initiative across the property.
For the future, sustainability is a key focus for Medvedev and his team. In line with global best practices, Le Royal Méridien is actively expanding partnerships with local agricultural producers, ensuring that ingredients are fresh, seasonal, and environmentally responsible. Looking ahead, a major milestone will be the launch of the hotel's very own vertical farm, set to open in the upcoming autumn.
