With more than two decades of international culinary expertise, Chef Simone brings a bold vision shaped by his roots in Napoli and refined through years of experience across top-tier hospitality brands including The Ritz-Carlton, Atlantis Paradise Island, Sandals Resorts, and Conrad Abu Dhabi Etihad Towers. His journey from Italy to the Caribbean, Spain, and the UAE has equipped him with a dynamic and global culinary perspective.
Prior to joining The WB™ Abu Dhabi, Curio Collection by Hilton™, Chef Simone served as Executive Sous Chef at Conrad Abu Dhabi Etihad Towers, where he oversaw ten diverse dining concepts. He was played a key role in menu development, cost control, staff mentorship, and leading high-profile culinary operations. His track record includes managing award-winning restaurants and launching new F&B concepts across the Caribbean, Europe, and the Middle East.
