With more than two decades of experience across Europe, the Middle East, and Asia, the Scottish-born chef is recognised for his classical training, inventive spirit, and ability to lead large teams while maintaining a deep respect for regional tastes. His career spans overseeing illustrious venues, spearheading hotel openings, and executing high-profile banquets for more than 1,500 guests.

From intimate tasting menus to large-scale galas, Mair's work is defined by a balance of precision and creativity. His leadership has been credited with elevating kitchen culture and delivering immersive dining experiences in some of the world's most sophisticated cities, says the hotel. At Sofitel Dubai Downtown, he will oversee the property's restaurants, lounges, in-room dining, and banqueting operations, with a focus on crafting a distinctive culinary identity rooted in French savoir-faire while embracing the cosmopolitan energy of Downtown Dubai.
