With nearly 20 years of global experience and a creative philosophy grounded in authenticity, sustainability, and refined technique, Chef Alejandro brings a fresh and thoughtful perspective.

A native of Guadalajara and now based in San Miguel de Allende, Chef Alejandro is known for his ability to celebrate regional Mexican ingredients through elevated yet approachable cuisine. Now as Executive Chef at NUMU Boutique Hotel, Chef Alejandro spearheads the culinary concepts for its rooftop restaurant, NŌIA, blending modern innovation with deep respect for tradition to create menus that are both artful and rooted in place.

Chef Alejandro joins NUMU from Hilton La Romana in the Dominican Republic, where he led the property's culinary team, and previously played a key role in the openings of Hilton Monterrey and JW Marriott Guadalajara. His formal training at the Corbuse Institute and the University of the Valley of Mexico, paired with hands-on experience in some of the world's most demanding kitchens, has shaped a culinary style that is both technically precise and deeply soulful.

With expertise in advanced techniques like molecular gastronomy and kitchen deconstruction, Chef Alejandro's arrival marks a bold evolution for NUMU's culinary offerings. His commitment to sourcing from local producers, mentoring young chefs, and crafting menus with meaning promises to leave a lasting imprint on San Miguel de Allende's dynamic food scene.

Guests can look forward to seasonal menus, new dining concepts, and immersive culinary experiences that reflect Chef Alejandro's vision in the months ahead. This Día de Muertos, he will debut a specially curated tasting menu inspired by ancestral Mexican flavors and ingredients, featuring dishes such as aguachile de acociles from Pátzcuaro with chiltepín tepache and maguey ice cream with roasted maguey pineapple compote. Each course blends tradition with innovation in a celebration of the holiday's rich culinary heritage.

A UNESCO World Heritage Site, San Miguel de Allende is one of the most iconic of Mexican cities but is also renowned for its architectural and stylistic connections to Europe's most charming places.
