With more than 20 years of experience across Southern California's most acclaimed kitchens, Chef Lai brings bold creativity, refined technique, and a globally inspired approach to coastal cuisine, further enhancing Splashes' reputation as one of Laguna Beach's premier oceanfront dining experiences.
Corporate Executive Chef Ron Fougeray will continue to oversee the entire resort's award-winning culinary program, while allowing Chef Lai to deliver his creative vision and leadership to the team at Splashes.
Raised in a family of restaurateurs, Lai's culinary passion began at a young age in his family's kitchen, where he learned traditional techniques and the importance of hospitality. He went on to graduate summa cum laude from the Texas Culinary Academy. He later earned his Associate of Culinary Arts degree from Le Cordon Bleu College of Culinary Arts in Austin, Texas.
Chef Lai's career highlights include chef roles at well-known Southern California restaurants such as The Blind Rabbit, The Iron Press at the Anaheim Packing House, Water Grill at South Coast Plaza, and Bourbon Steak at the Waldorf Astoria Monarch Beach. Known for his forward-thinking menus, artistic plating, and thoughtful leadership, he has established himself as a chef who consistently elevates the dining experience.
Now leading the culinary program at Splashes, Chef Lai is infusing the menu with vibrant, seasonal flavors and globally inspired techniques while staying true to the restaurant's ocean-inspired roots. With Chef Lai at the helm, Splashes continues its legacy as a star of Laguna Beach's dining scene, known for its coastal flavors, breathtaking ocean views, and extraordinary hospitality.
