Jeff O’Neill

Goldener Hirsch, Auberge Collection, the Austrian-inspired, mid-mountain hotel and residences in Deer Valley, Utah, today announces the appointment of Jeff O'Neill as Executive Chef. A graduate of The Culinary Institute of America with more than three decades of refined culinary experience, Chef O'Neill has cooked in some of the world's most celebrated kitchens, including Restaurant Daniel and Le Bernardin in New York City, and has led acclaimed programs in Palm Beach, Miami, and beyond.

In this new role, Chef O'Neill will lead the culinary direction at Goldener Hirsch, bringing his vision and expertise to elevate the property's dining experiences across the resort. Drawing on his Michelin-starred training and reputation for creativity, he will play an integral role in reimagining the hotel's new signature restaurant, which is slated to open this November. While epicurean excellence will drive the new restaurant and menu development, beloved classics will also remain, such as the iconic Goldener Hirsch fondue. Whether gathering at the brand-new restaurant, enjoying homemade pastries in the morning at The Kitz or participating in après at The Antler Lounge, the warm, welcoming spirit of the culinary program is at the heart of the hotel.

O'Neill began his career in New York, serving as chef saucier on the opening team of Daniel Boulud's flagship Restaurant Daniel, which was named one of the "Top Ten Restaurants in the World" by the International Herald Tribune. He later joined the brigade at Le Bernardin under Eric Ripert, the only three-Michelin-starred seafood restaurants in the United States. Relocating to Palm Beach, he helped L'Escalier at The Breakers earn a Five Star, Five Diamond distinction and a place on Gayot's list of the "Top 40 Restaurants in the U.S." His career then expanded into private hospitality, serving as Executive Chef for the President of the United States and overseeing all dining outlets and high-profile events at a renowned private members' club in Palm Beach. He also played a key role in the development of Michelin-starred restaurant concepts for the Trump Hotel Collection in both Chicago and Las Vegas.

In Miami, O'Neill's tenure at The Villa by Barton G., located at the famed Versace Mansion, cemented his reputation as a creative force in luxury hospitality. He pioneered inventive presentations and immersive dining programs that earned recognition from The Wall Street Journal as part of "one of the most creative teams on the planet." Along the way, he made multiple appearances on The Oprah Winfrey Show with what became the internet's first-ever "viral recipe," and created both the famed "Flavor Changing Nitro Cocktail" and the "Turkey Burger." His work has consistently blended impeccable technique with imagination, resulting in experiences that are equal parts refined and playful.

The Restaurant at Goldener Hirsch is open seven days a week. For more information, please visit auberge.com/goldener-hirsch.
