Carina Romero has been appointed General Manager at Mar del Cabo by Velas Resorts in Cabo San Lucas, Mexico
Velas Resorts announces the appointment of Carina Romero Galán as General Manager of Mar del Cabo. In her new role, Romero oversees all aspects of the 48-suite boutique hotel's operations, including personalized guest services and food and beverage programming at Encanto Farm & Sea restaurant. Her appointment reinforces Mar del Cabo's commitment to delivering exceptional service and maintaining its position as a premier boutique destination in Los Cabos.
Romero has spent the past six years with Velas Resorts in Los Cabos, most recently as Food & Beverage Director at the AAA Five Diamond Grand Velas Los Cabos. The beachfront property features AAA Five Diamond Cocina de Autor, recent recipient of a MICHELIN star, led by two MICHELIN star chef Sidney Schutte, along with six other gourmet restaurants. She also contributed to the pre-opening planning of Grand Velas Boutique Los Cabos, where she developed service standards, operational budgets, and menu concepts. Her experience includes strategic planning, profit and loss management, and leadership development in world-class hospitality environments.
Prior to joining Velas Resorts, Romero held senior food and beverage positions at Conrad Tulum and El Dorado Maroma & Palafitos, where she managed multiple specialty restaurants and bars while maintaining the highest standards of service excellence. She holds a Bachelor's degree in Nutrition from Universidad Autónoma del Estado de Hidalgo and has completed certifications in Six Sigma, Finance for Hotel Executives, and Wine Studies.
Mar del Cabo is Velas Resorts' only European Plan offering. The boutique hotel features 46 one- and two-bedroom suites and two penthouses, each designed with minimalist aesthetics that complement the property's oceanfront setting. The property's signature restaurant, Encanto Farm & Sea, showcases locally sourced ingredients from nearby Baja California producers, with over 90% of menu items sourced from regional farms, ranches, and orchards.
