Richard Hinojosa

Omni Scottsdale Resort & Spa at Montelucia is pleased to announce the appointment of Richard Hinojosa as Executive Chef, overseeing the resort's dynamic culinary program across its four distinct dining outlets. With more than 25 years of leadership experience spanning luxury resorts and celebrated independent restaurants across Arizona and beyond, Chef Hinojosa brings a thoughtful, experience-driven approach rooted in seasonality, thoughtful hospitality, and a strong sense of place.

A native of San Antonio, Chef Hinojosa began his hospitality career on the famed River Walk before building an expansive résumé that includes leadership roles at some of the country's most respected resort destinations, including Mary Elaine's at The Phoenician (Mobil Five-Star, AAA Five-Diamond), Hotel Jerome in Aspen, The Westin Maui Resort & Spa, and Wigwam Resort & Spa. Most recently, he owned and operated the acclaimed Arcadia-based concept CRUjiente Tacos, earning widespread local and national recognition for its inventive approach to Mexican-inspired cuisine.

At Omni Scottsdale, Chef Hinojosa will lead the culinary vision across the resort's refreshed dining venues, including signature restaurant Prado, known for its savory wood-fired tapas and mesquite-smoked cocktails; Taqueria Centro, which elevates Arizona-Mexican cuisine with bold flavors and craft tequila cocktails; and Mbar, an Andalusian-inspired gathering space offering tapas, sangria, and fine wines set against fire-lit courtyards. His approach blends Spanish influence with Southwestern sensibility, balancing refined technique with warmth, generosity, and approachability.

Additionally, Chef Hinojosa is a Level Two Certified Sommelier through the Court of Master Sommeliers and has appeared on Diners, Drive-Ins and Dives, Chopped, and PBS's Plate & Pour, with additional features in Food Network Magazine, USA Today, Southwest Airlines Magazine, and the books American Tacos: A History and a Guide and Phoenix Cooks.

Looking ahead, guests can expect evolving seasonal menus, enhanced beverage pairings, and immersive dining moments that celebrate Montelucia's old-world Spanish influence while embracing the vibrant flavors of the Southwest.
